Foodie Monday: Ice Cream Treats

It’s been a couple of weeks since I posted about food. And since it is Monday, and a holiday, I will share about the homemade ice cream we made last night. While getting to know the Mennonite community near our cabin, we found one of their stores. It is sure to become a favorite stop, probably twice a month. While we were browsing, I found some ice cream sandwich cookies — perfect chocolate circles. It inspired me to make ice cream sandwiches for dessert for our weekend guests.

I have to back up here. While we were packing to move, I found the “ice cream ball” I had bought from LLBean years ago in the back of the pantry. As it sat on the counter, my husband said, “you’re not getting rid of that are you?”

“No,” I responded. “I thought that it might be fun to have this at the cabin.”

He agreed.

So when I found the homemade chocolate wafers, I thought of the ball and the fact that we could have our guest’s children make the ice cream. I quickly looked up a simple recipe for ice cream in a ball while sitting in the grocery store’s parking lot on Saturday. Fortunately, there were only a few ingredients needed to make it. These included heavy cream, vanilla, sugar, rock salt, and ice.

After dinner last night, we had the 8th-grade guest mix up the ingredients in the metal canister inside the ball. Then, we flipped it over and added the ice and rock salt. Then, the ball gets rolled, tossed, and shaken for ten minutes. Her brother helped with the mixing. After ten minutes, the water is removed and more rock salt and ice are added. The ice cream is checked and stirred. It was starting to congeal. The top goes back on securely and ten more minutes of mixing by rolling and shaking occurred.

Now it was my turn to work. I took the ball and scooped out the frozen vanilla ice cream onto the chocolate cookie sandwich pieces. I wrapped them individually and put them in the freezer.

We were all anxious to eat them, so after an hour and a half, we did! The ice cream was still very soft but delicious. It was a fun and easy dessert for a holiday weekend.

The only thing I’d do differently is make a larger amount! Yum!
